The HGC team have developed a different spin on the blossoming bushcraft experiences out there – more Hugh Fearnley-Whittingstall than Ray Mears.Â Setting their courses in an amazing field kitchen and showing you not only what to look for when foraging but how to prepare and cook it to make truly delicious food. I was blown away by freshly made venison burgers, loin fillet of rabbit in sorrel salsa verde and bush cocktails. Get it whilst it’s hot!
Steffan Stringer – Seasonal Day Course Spring
It was an amazing experience. We learned loads and made some really scrummy dishes. Nick was an excellent course leader who really knew his stuff. He gave us demonstrations on how to butcher the rabbit, ponass the fish etc, then let us get on with it, and was always on hand to guide us if necessary. We came away with a whole bunch of recipes, including some for wild brewing. Kinda tempted to try making marrow rum!
