Courses / Specialist – Autumn, Fungal Foray - From £120 per head

Other than our Seasonal day courses we also offer specialist days throughout the year, at HUNTER GATHER COOK we understand that it can take more than just the basics to live comfortably in the wild and the appetite for amazing adventures and great food never ceases.

Our Specialist courses are recommended for those that have already done a Seasonal Day course with us although this isn’t a necessary requirement to book a place. These courses are designed to further your knowledge in a particular area and learn some unique skills.

Fungal Foray & Feast (Autumn)

Come and join the HUNTER GATHER COOK team for a day in the woods and learn how to identify and gather mushrooms, followed by cooking up a variety of taster dishes using our fungal finds from the day. Our resident Mycologist Iona Fraser will teach you all about the various fungi families, where they grow and why and how to harvest wild mushrooms in a safe and sustainable manner during a few hours wandering through mixed woodland. Our expert truffle hunter B dog  will demonstrate her unique skills.

The HGC game larder at this time of year is packed with Pheasant, Duck and Partridge, so you will also learn how to process game birds and prepare them for the pot. The rest of the day will be spent cooking up our wild finds in a variety of different ways on open fires & in Dutch ovens at our mobile woodland kitchen.

Places for this course

There are a limited number of just 14 places for this course. All Mushroom Days start at 9am and take place at Broadstone Warren on Ashdown Forest. Please click here for directions.
