Hunter Gather Cook - Foraging + cooking with fire since 2011

Discover the seasonal treats of Sussex, with a culinary experience designed to get you up close and personal with the very best produce. From preparing your meat main courses, to foraging on a wild food walk, to enjoying your hard work as it passes your lips, this course is so satisfying, you’ll want to experience it every season!

Upon arrival you’ll be met with a morning brew and a Hunter Gather Cook briefing. Once you’re caffeinated and knowledged up, we’ll throw you straight in at the deep end, as we send you off to our butchery field camp. Here you’ll not only learn how to skin, gut and joint the wild meat of the day but will help prepare your lunch and afternoon taster dishes.

Before lunch, you’ll embark on a foraging walk where we will teach you how to identify seasonal wild edibles, as you taste and nibble your way through the woods, fields and meadows.

On return to the HGC HQ we’ll put your newly acquired plant knowledge to the test, followed by preparation of a two-course menu with our team of chefs, using both foraged and store cupboard staples.

After enjoying your lunch, you’ll move on to the afternoon workshops, which vary according to season. These are designed to teach you a variety of skills that will encourage you to feel more comfortable in the outdoors and help you to see how the surrounding landscape can not only be your larder but a workshop full of useful materials.

The day will round up with a wild cocktail workshop and tasting as well as a final cook off using a variety of outdoor cookery methods. Expect to get your hands dirty, a good dousing of wood smoke and learn valuable skills that will stay with you forever ready for your next culinary adventure into the wild.
