Learn the art of baking over fire with experienced baking teacher David Wright, co-author of Backyard Baking. He’s a third generation baker from Suffolk with a passion for everything grainy.
A day’s course that will cover a range of techniques such as sourdough and commercial yeast baking as well as chemical leavening. We will make Sourdough Flatbreads, discussing the science behind the process and how to create your own sourdough recipe. We will make fluffy English Muffins and discuss how to use baker’s yeast and the soft delights of enriched doughs. Finally we will make American Biscuits (like a laminated scone) to demonstrate how we can make something tasty in a short space of time.

As with any HGC course, you guys will have a lovely 4 course menu with paired wines on the day, showcasing some of our ferments/pickles and the finest of Sussex Game teamed with delightful bakes.
